Indeed, the term blue point is synonymous with the German cookware manufacturer Fissler.

After months of comparing the pros and cons of the various pressure cooker brands, sizes, features and above all durability – we\’ve decided on buying not just one but two pressure cookers which will combine the functionality of our vintage T-Fal model and potentially replace a number of pots and pans in the pantry.

What were we looking for in a pressure cooker? Our list of “must haves” included:

  • A wide base:
    A wide base to match the 10 and a half inch wide vintage pressure cooker. Having a pan wide enough to brown several pieces of meat at a time or even a whole fryer if needed instead of just a couple pieces at a time made it quick and easy to prepare a great pressure cooked meal. The standard base of most current pressure cooker models is just a little more than 8 1/2 inch in diameter. Check!
  • A relatively shallow pan:
    With rounded walls please! We\’re used to cooking with 4 inch deep pan/ How many times did you burn your forearm along the edge of of the pan or have your hand spattered with hot fat while reaching down to flip a piece of meat? If all you were doing was to add liquids or a series of ingredients then “no big deal” but you step into the realm of hazardous when reaching down into a deep, narrow pan. Check!
    Give me shallow and wide. If these features existed in a vintage model then surely they were available in a new generation pressure cooker.
  • Equal or larger capacity:
    The old pressure cooker had a 4.5 L capacity (a wee bit less than five quarts). The skillet holds a generous 4.2 quarts.
  • Standard Pressure Settings
    There are two pressure settings – low at 6 psi and high at 11.6 psi but those are the Europeansettings. Standard for pressure cookers sold in the US is 8 and 15 psi settings. So we adjust the cooking times.In our research, we also discovered that certain pressure cooker models sold in Europe are not sold in the US because they are not UL approved.

    The Fissler pressure pan set with blue point pressure lid meets all of the most important “must have” features we were looking for, nearly all of the “it would be nice if” requirements plus some extras which only add to the functionality of the set: the wide base, the shallow depth, a grill bottom, a fryer basket, the ideal capacity for our current needs, and the high quality of materials and workmanship.

    We may have to get used to the silent treatment – Blue Point is known to be silent and steam free while under pressure.
